#WorldDiabetesDay Pancakes Recipe

Complex carbohydrates are not only full of essential nutrients but have been shown to regulate blood sugar in those with type 2 diabetes. Simple carbohydrates are fast burning meaning they release their sugars quickly causing sudden spikes in insulin. This has been shown as a contributing factor to many health complications such as insulin resistance, diabetes, obesity, hormonal imbalances, and difficulty losing weight.  

Complex Carb Pancakes

1/2 cup of chickpea flour
1/4 cup of milled almond flour
1 large egg
1/2 cup of water or unsweetened almond milk 
1/4 teaspoon of baking soda 
1/2 cup of fresh or frozen blueberries 
2 tablespoons of coconut oil for cooking

Combine chickpea flour, almond flour, egg, water/almond milk, baking soda and frozen blueberries.  Melt coconut oil in a pan and cook one ladle of batter at a time. Serve with fresh almonds and sprinkle with cinnamon.
