Trying to cut down on the gluten this holiday season? Try this delicious wild rice gluten free stuffing that is sure to impress all your guests!
1 cup of wild rice ( 1 cup to 3 cups of water, cook for 45 minutes- 1 hour until fully bloomed)
1 onion
1 cup of white wine
3 tablespoons of coconut oil
3 tablespoons of organic grass fed butter
2 cloves of garlic
2 tablespoon of Herb de Provence
1 cup of unsweetened dried cranberries
1 apple, diced
1 cup of walnuts
1. Set oven to 350 degrees.
2. Brown onions, garlic and herbs in 1 tablespoon of coconut oil on your stove top.
3. As the onions start the brown, add white wine to the pan. Let simmer until most of the liquid has been absorbed.
4. Add butter and remaining coconut oil and stir until melted. Pour over cooked wild rice in an oven safe dish.
5. Mix in dried cranberries, diced apples and walnuts. Place in oven for 10 minutes. Serve warm
