Healthy Gluten Free Stuffing

Are you planning a healthy Christmas dinner? Finding great recipes that will please every one of your guests can be difficult, but we’ve come up with a yummy Christmas stuffing that will ensure plenty of holiday cheer!!

1 cup of wild rice
1 onion
3 cloves of garlic
2 tablespoons of Herb De Provence
2 tablespoons of coconut oil
2 tablespoons of unsalted butter
1/4 cup of white wine
1/2 cup of dried cranberries
1 cup of walnuts
1 apple

1. Cook wild rice in 3 cups of water for 45 minutes or until fully bloomed
2. Brown onion, garlic and Herb De Provence in coconut oil. When onions become translucent, add white wine and cook down. When liquid has completed cooked out, add butter until melted.
3. Pour onion mixture over cooked wild rice and place in an oven safe pan
4. Add dried cranberries, walnuts and diced apple. Mix until all ingredients are well incorporated
5. Place in the oven for 15 minutes at 350 degrees
5. Serve warm
